Hey all,

Whole Wheat and oats today.
I find that a cup of cottage cheese lends a very welcome moistness to these hardy cakes. I just cant help but toss in a bit of ground ginger, nutmeg, and cinnamon,,, just because .
In case you don't know, you can add apple cider vinager to milk at the ratio of; one tbsp. per cup of milk and get a great substitute for buttermilk. The smell of these babies cooking will call the deepest sleepers to the table!!!!!!! Oh YAAAAAAAAA.

Spelt / Wheat germ and molasses

Finally,,,,, a morning of sunshine! We where wondering if spring had forgotten Boise.

This Sunday's entry;
1 cup spelt flour
1/2 cup wheat germ
2 whole eggs
molasses (as a substitute for the sugar)
vanilla
baking powder
butter
milk (I add, 2 tbsp. apple cider vinegar, this is a great substitute for buttermilk)
cinnamon
nutmeg

Don't forget, it's best to mix the dry ingredients and wet ingredients separate first. Then turn the wet into the dry by hand with a whisk, (mix just enough to get an even batter).


You know this stuff really doesn't take much time. This morning I was up @ 6:00 made coffee, washed last night's dishes, and had the first pancake in the pan @ 6:37. So don't think "from scratch" takes to long.
Any way,,,, even the simplest made from scratch stuff will let your family know that you care enough to give them the best of you, and you know what ? This makes even the plain stuff, somehow more special.

Spelt/Wholewheat/Raspberry

Whan my finnicky 11 year old say's these are delicious!!!!! well I'd say it's a winner.
A cup of Cottage cheese makes these especialy moist and adds to the buttermilk flavor as well. I use a bit of ground ginger, 1 & 3/4 cup flour, and bust up the froven berries in the bag, (smack em against the counter top). I would wait to add the berries until you are just ready to cook, or else they will thaw in the batter before they hit the grill/pan.

Hello All

Hey all you "gotta do it myself"ers out there, how about some feedback with old pancake recipes.
What I am looking for in particular are tips etc., on any ethnic pancakes/flapjacks/flatbreads and such eh?

I will be posting weekly ( Sundays are my Papa's pancakes day tradition ) so I should be actively posting then.
